    Newicon7 What's cooking for the 4th at your place?

    I've got butts on the brain. Two boston butts to be more exact. Plan on cranking up my neighbor's large (48" dia.) pipe grill/smoker for around 6 hours(since my new smoker is still under construction). I am going to marinate them starting Tuesday evening in a cajun spice/garlic/onion powder mix with a sherry base. I will cook the butts over a full size 2" steam table pan with the marinate in it. I'll refill the pan with water and sherry every couple of hours. That and some good thick bacon will keep the butts good and moist. I'll change out the bacon about every 3 hours. It makes good a good snack while we wait for the "real thing."


    Hopefully the weather will hold out so we can take the kids skiing while the butts smoke a while. We'll wander down to the river around dark to watch the fireworks.

    fish fry.....although BBQ does sound pretty good......might have to do one for lunch and the other for supper.....o yea and i almost forgot.....BUD LIGHT
